You can utilize any language you want to utilize here. It's just a matter of finding people who speak it, which is fairly easy in this melting pot of a city. Since you asked about French, do you mean classic French, Canadian French, Creole, Haitian Creole, Basque, or other?
Also, when you say "NYC", do you mean Manhattan or all 5 boroughs?
