Tapas bars

I am thinking about leaving the Taxi Industry and open a Tapas and Wine Bar. I am starting this thread looking for input to help my research on everything about it, from marketing to choosing a location in NYC.
Why do you go to Tapas Bars?.. Which ones are your favorite ones and why?.. Did you ever wish a certain type of food was on the menu?..

..and anything else you might think off for my business plan.. Will you help me?......

    No. Beause it's the hardest industry to make any money.
    Everyone wants to open a bar - and anyone can.
    If you open a great tapas bar, another one across the street thats even better
    will be eating your lunch.
    Spend the money on something else - go to South America and enjoy the hookers and tapas there.
